WHISK Dining Atelier | Beyond Origin - When Kanazawa Meets Sicily Four Hands Dinner by Italian Chef Matteo Alberti and Japanese Chef Taku Tabuchi (4 & 5 Dec)
For two nights only on Dec 4 & 5, 2026, Kanazawa meets Sicily at WHISK Dining Atelier as Chefs Taku Tabuchi and Matteo Alberti join hands for the first time. Their collaborative 8-course menu featuring regional and seasonal produce exchanged between the two chefs journeys between Noto in Ishikawa and Noto in Sicily, in dishes such as Kōbako crab with Sicilian ancient-grain spaghetti, taro gnocchi with anchovy butter, bluefin tuna belly with caponata, and Noto pork with salsa verde and coffee-shoyu sauce.
For two nights only at WHISK Dining Atelier in Hong Kong, Kanazawa meets Sicily in a unique dialogue of seasonality, terroir and two distinct culinary perspectives beyond borders.
Join us for the one-of-a-kind experience curated by the two chefs, who appeared at The Mira Hong Kong before on separate occasions, now to join hands for the very first time bridging their original perspectives on Italian cuisine with a distinct sense of place.
Founded in 2020, in culture-steeped Kanazawa, ORIGO is the place where all things begin and where the meal becomes a moment shared. An intimate family restaurant blending Japanese aesthetics with Italian conviviality in search of taste’s roots and in rhythm with nature.
Opened in spring of 2026, CAPOVALLO is a remote farm-to-table restaurant and event space in Sicily, where the setting becomes a part of the experience. Local produce, authentic Italian cooking with Japanese sensibility, and open-air setting converge with ease.

Charismatic Chef Taku Tabuchi, formerly the Head Chef at modern Italian restaurant S’accapau in Tokyo, left Japan for Italy at age 18 to learn the secrets of Italian cuisine directly from the source. He worked his way through Italian restaurants before opening his own in Hamburg, Germany, and returning to his home country to serve cuisine without preconceived notions at one of the city’s top Italian restaurants with a global perspective. Now, he is realising his life’s dream of working closer to the land, where produce grows outside the windows of his Mercato Con Cucina concept, CAPOVALLO, in a sun-drenched, idyllic setting of Sicily. Many of the vegetables and produce are grown directly in the surrounding gardens and 40+ hectare property which also serves as a venue for outdoor events and garden banquets highlighting an authentic rural yet elegant atmosphere. Conceived as a produce market with a kitchen, the restaurant utilizes mostly organic produce, from Sicilian lemons to chards, as well as self-produced wines.
Talented Chef Matteo Alberti brings his detail-oriented training from Michelin-rated kitchens to the heart of Kanazawa where in a restored machiya house turned into an intimate restaurant, ORIGO, he embraced an artisanal approach to cooking—adapting to the ingredients and their availability, sourced from the region. His pursuit of preserving the culinary traditions of Japan is best seen in a quest of reintroducing the disappearing art of Makiburi (aged yellowtail) passed to him by a Japanese artisan. He works with local foragers and game hunters to supply his restaurant exclusively with wild meat, while the nearby Noto Peninsula serves as the constant source of inspiration. The chef who is also a visual artist, self-publishes a beautifully printed indie magazine on Japanese food culture featuring stunning photography which scored international acclaim.
The chefs’ cross-cultural dialogue comes into sharpest focus on the plate, with ingredients from Noto in Sicily and Noto in Ishikawa featured prominently in dishes of both Chefs.
The 8-course dinner opens with playful bites including a miniature Arancino of Noto Koshihikari rice, Wagyu meat sauce and Piedmont white truffle, before moving highly prized and masterfully Aged Winter Yellowtail (Kanburi) with walnut-shoyu koji. A seafood course follows bringing together the two Notos: Japanese frutti di mare from Ishikawa paired with sun-drenched flavours of Sicily, with capers and semi-dried tomatoes. The exchange continues through the heart of the menu. Sicilian ancient-grain spaghetti meets Ishikawa Kōbako crab, Sicilian lemon and ginger, while taro is transformed into Gnocchi with Sicilian anchovy butter, stracciatella and Noto citrus.
For mains, Charcoal-grilled bluefin tuna belly arrives with Sicilian caponata, followed by Noto Pork brasato with Tuscan kale, salsa verde and uplifting coffee-shoyu sauce. Even dessert crosses borders, from Sicilian almond panna cotta to an upside-down cake (Torta capovolta) layered with quince, Kaga-bōcha cream and matcha.
The menu at WHISK Dining Atelier is the result of months of conversations between the two chefs about food, its origins and its place in modern culture. For diners curious about what happens when culinary traditions travel beyond borders, this is a rare conversation best experienced at the table.
