[SOLD OUT] Cuisine Cuisine at The Mira | Château Palmer Wine Dinner (6 Nov)
Join an elegant evening of contemporary Cantonese cuisine and Bordeaux excellence at Cuisine Cuisine at The Mira with an exclusive Château Palmer wine pairing menu, presented by estate co-owner Mr. Charles Sichel!
Château Palmer produces wines of complex elegance and refined delicacy that beautifully express the exceptional terroir of Margaux.
On 6 November, The Mira Hong Kong sets the stage for an exclusive evening devoted to Château Palmer, one of the most revered Third Growths in the historic Bordeaux Wine Official Classification of 1855.
Hosted by special guest Mr. Charles Sichel—whose family co-owns this legendary Margaux estate as their cherished home domain ("le domaine de la famille Sichel à Margaux")—this one-night-only wine dinner invites connoisseurs to experience the true essence of Château Palmer. Mr. Sichel will share personal stories and insider heritage from the estate as he leads guests through an extraordinary six-wine journey. The tasting features the rare Château Palmer Historical XIXth Century Wine (2014), bringing centuries of prestige, precision, and iconic Margaux terroir to life.
Rooted in the fine gravel soils of Margaux and Cantenac, Château Palmer is celebrated for its signature velvety texture, generous fruit, and vibrant aromatic purity. The estate seamlessly blends Merlot, Cabernet Sauvignon, and Petit Verdot into wines of exceptional grace. Beyond its iconic Grand Vin, Château Palmer introduced Alter Ego de Palmer in 1998—a fresh, distinct interpretation crafted from the same privileged terroirs. From 19th-century blending traditions to classic vintages, now coming from vineyards with organic certification, every bottle reflects the authentic spirit of Margaux.
All the wines introduced by Hotel Sommelier Alan Sun together with Mr. Charles Sichel will be paired with harmoniously curated modern Cantonese creations by Cuisine Cuisine. Featuring a vertical tasting of three standout vintages, the menu is thoughtfully crafted by the culinary team spearheaded by new Chinese Executive Chef Lau to complement Bordeaux’s structure and aromatic nuances. Expect refined contrasts and elegant depth across highlights such as the vibrant Cuisine Cuisine Trio featuring roasted suckling pig with poached goose liver, luxurious Braised whole abalone with pork tendon, rich Baked boneless beef short ribs with garlic, and fragrant Stir-fried risoni with basil and black pepper.
