Join us at modern Cantonese Cuisine Cuisine for a one-night only Ayakiku Sake Dinner showcasing the local spirit of Kagawa as part of the Mira Dining Gourmet Month events in 2024!

Ayakiku is the flagship sake brand of Ayakiku Shuzo, a brewery with a 230-year legacy in Kagawa prefecture, crafted using the local underground water of Ayagawa town, where the brewery is located, and local strains of rice including Yamada and Ooseto.

Ayakiku sake embodies the rich terroir of Kagawa and showcases the brewery's commitment to quality and creativity, while pushing the boundaries of traditional Japanese brewing. Recently, the brewery introduced "Sanuki Olive Yeast" cultivated from the flowers and fruits of Shodoshima Island's olive trees. The resulting "Ayagiku Sanuki Olive Junmai" exhibits a subtly sweet, fruit-forward aroma, a juicy mouthfeel, and a sharp, clean acidity. Such unique expression of local ingredients and innovative techniques reflects Ayakiku Shuzo's dedication to crafting exceptional sake for modern palates

Get to know the secrets behind 6 types of unique sake and shochu from Ayakiku's expert as you indulge in culinary masterpieces of Chinese Executive Chef, Edwin Tang, presenting 6 contemporary Chinese dishes such as Cold Arctic clam with fresh sand ginger paired with creamy and smooth sparkling Ayakiku sake; Crispy garoupa fillet with chrysanthemum, passion fruit, lemongrass and chili served with deep-flavoured Junmai type Ayiakiku sake, and Braised wagyu beef cheek with green Sichuan pepper and pesto paired with Unfiltered premium Kuni-Shige Daiginjo Sake.

Another highlight of the dinner is a clay-pot aged, well-rounded Ayakiku Sanuki no Rice Shochu matured in oak with pronounced ginjo-aroma and subtle sweetness.
