The wine selection is skillfully matched with contemporary Cantonese cuisine by Chinese Executive Chef Edwin Tang, showcasing dishes such as: Pan-Fried Scallop with White Wine and Green Peppercorn Sauce; Crispy Pigeon Stuffed with Minced Shrimp Mousse; as well as Sautéed Australian Boneless Short Rib with Portobello Mushroom served with crimson and luminous Roux Père & Fils, Vougeot 1er Cru “Les Petits Vougeots” which exhibits silky tannins, aromas of violets and truffles, and elegant finish.
